This Cucumber Salsa is easy to make, refreshing, and perfect for eating with crispy tortilla chips or on tacos, enchiladas, and grilled meats.

Ingredients
- 2 large cucumbers, peeled and diced
- 2 cups diced Roma tomatoes
- 1 cup diced red onions
- ⅔ cup chopped cilantro
- 2 Jalapeno peppers diced
- 2 cloves garlic, grated or minced
- 6 tablespoons lime juice (about 2 large limes)
- 1 tablespoon olive oil
- kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Combine the cucumbers, tomatoes, onions, cilantro, jalapeños, garlic, lime juice, olive oil, salt, and black pepper in a large bowl. Toss together to coat, taste, and season with more salt and black pepper as needed.
- Cover and refrigerate for 30 minutes to let all the flavors meld together.
- Serve with tortilla chips or on tacos, lettuce wraps, salads, fish, or any dish that needs a hint of freshness and brightness.
