Cucumber Sandwiches
The perfect finger food for your next afternoon tea. Refreshing, crunchy, and lighter than your usual Cucumber Sandwiches!
Ingredients
- 1 cup yogurt plain, Greek
- 1 tablespoon dill finely chopped, fresh
- 1 tablespoon chive finely chopped, fresh
- 1/4 teaspoon garlic powder
- salt to taste, sea salt
- black pepper to taste, freshly ground
- 1 English cucumber thinly sliced into coins, large
- 10 lices whole grain bread crusts cut off
Instructions
- In a mixing bowl, combine Greek yogurt, chopped dill, chives, garlic powder, salt, and pepper until well mixed.
- Place two slices of bread on your chopping board, and spread the yogurt mixture evenly on one side of each slice of bread.
- Arrange cucumber slices on one of the slices of bread, then top with the other bread slice to form a sandwich.
- Cut each sandwich into two or three strips and serve immediately, or cover and refrigerate to keep fresh.
