Cucumber Sandwiches

Ingredients

  • 1 cup yogurt plain, Greek
  • 1 tablespoon dill finely chopped, fresh
  • 1 tablespoon chive finely chopped, fresh
  • 1/4 teaspoon garlic powder
  • salt to taste, sea salt
  • black pepper to taste, freshly ground
  • 1 English cucumber thinly sliced into coins, large
  • 10 lices whole grain bread crusts cut off

Instructions

  1. In a mixing bowl, combine Greek yogurt, chopped dill, chives, garlic powder, salt, and pepper until well mixed.
  2. Place two slices of bread on your chopping board, and spread the yogurt mixture evenly on one side of each slice of bread.
  3. Arrange cucumber slices on one of the slices of bread, then top with the other bread slice to form a sandwich.
  4. Cut each sandwich into two or three strips and serve immediately, or cover and refrigerate to keep fresh.
