Cucumber Tea Sandwiches

Elegant and tasty, cucumber tea sandwiches are flavored with cream cheese and dill.  Perfect for afternoon tea, a shower, book club or a garden party.

Ingredients

  • 1/2 English cucumber or slim regular cucumber
  • 8 ounces cream cheese or vegan cream cheese, room temperature, reduced fat
  • 1/8 t garlic powder
  • ½ teaspoon salt
  • 1 T dill chopped, fresh
  • 12 lices white bread

Instructions

  1. Cut cucumber into thin slices.
  2. Whip together cream cheese, salt, garlic and dill until smooth.
  3. Remove crusts from bread. (Save crusts for breadcrumbs or compost.) Spread bread with cream cheese mixture, layer with cucumber slices, then top with second piece of bread also spread with cream cheese. Cut into four, roughly square quarters.
  4. Decorate with dill and serve.
