Cucumber Tomato and Feta Salad

A crisp, fresh and delicious cucumber, tomato, and feta salad that goes with everything! Pull it together easily to serve with any meal.

Ingredients

  • 2 large English cucumbers cut into 1/2-inch cubes
  • 12 ounces Grape or Cherry Tomatoes halved or quartered
  • ¾ medium red onion thinly sliced
  • 8 ounces feta cheese crumbled
Vinaigrette
  • ½ cup extra-virgin olive oil
  • ¼ cup red wine vinegar
  • 4 garlic cloves minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon fresh dill chopped
  • ½ tablespoon honey
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic and herb seasoning
  • ½ teaspoon freshly ground black pepper

Instructions

  1. In a large bowl, combine the cucumbers, tomatoes, and onions.
  2. In a medium bowl, whisk together all the ingredients for the vinaigrette.
  3. Pour the vinaigrette dressing onto the salad and toss to coat all over. Gently stir in the feta cheese. Serve the salad cold.

Notes

  • Storage: Store leftovers in a sealed container in the fridge for up to 3 days.
