Cucumber, Tomato, Mozzarella Salad with Balsamic

This salad combines crisp Persian cucumbers, juicy cherry tomatoes, and soft bocconcini mozzarella. Tossed in a simple balsamic vinegar and olive oil dressing with sea salt and freshly cracked black pepper, it offers a fresh and light side or starter. Ingredients

  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 3 mini Persian cucumbers, sliced
  • 10-11 cherry tomato sliced
  • 4-5 bocconcini small balls of mozzarella cheese, sliced
  • salt to taste, sea salt and freshly cracked
  • black pepper to taste, sea salt and freshly cracked

Instructions

  1. Combine the balsamic vinegar and olive oil together; mix well.
  2. Combine the cucumbers, tomatoes, and mozzarella cheese together in a bowl. Season with sea salt and freshly cracked pepper, to taste.
  3. Drizzle the top of the salad with the balsamic vinaigrette on top. Serve. Enjoy.
