Cucumber, Tomato, Mozzarella Salad with Balsamic
This salad combines crisp Persian cucumbers, juicy cherry tomatoes, and soft bocconcini mozzarella. Tossed in a simple balsamic vinegar and olive oil dressing with sea salt and freshly cracked black pepper, it offers a fresh and light side or starter. Ingredients
- 2 tbsp balsamic vinegar
- 1 tbsp olive oil
- 3 mini Persian cucumbers, sliced
- 10-11 cherry tomato sliced
- 4-5 bocconcini small balls of mozzarella cheese, sliced
- salt to taste, sea salt and freshly cracked
- black pepper to taste, sea salt and freshly cracked
Instructions
- Combine the balsamic vinegar and olive oil together; mix well.
- Combine the cucumbers, tomatoes, and mozzarella cheese together in a bowl. Season with sea salt and freshly cracked pepper, to taste.
- Drizzle the top of the salad with the balsamic vinaigrette on top. Serve. Enjoy.
