Ingredients
- 1 pound cucumber thinly sliced, mini
- 1 red onion thinly sliced, small
- 2 heirloom tomatoes diced, large
- 1 tablespoon dill minced fresh
- 1 tablespoon parsley fresh, minced
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- kosher salt to taste
- black pepper to taste
Instructions
- In a large bowl add all the ingredients and toss to combine.
- Taste, and season with the desired amount of kosher salt and black pepper.
