Cucumber Tomato Salad

Ingredients

  • 1 pound cucumber thinly sliced, mini
  • 1 red onion thinly sliced, small
  • 2 heirloom tomatoes diced, large
  • 1 tablespoon dill minced fresh
  • 1 tablespoon parsley fresh, minced
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • kosher salt to taste
  • black pepper to taste

  3. Let sit for at least 1 hour before serving.
