Instructions

  1. Preheat oven to 350.
  2. In a large bowl, mix cake mix, egg whites, oil, milk, mayonnaise, vanilla, and almond extract. Stir until combined.
  3. Line two muffin pans with cupcake liners.
  4. Fill liners 2/3 full and bake for 18-20 minutes.
  5. While cupcakes are baking, cream the butter in a large bowl.
  6. Add powdered sugar one cup at a time, stirring well and scraping the bowl between each cup.
  7. Add vanilla extract, mix until combined.

For the chocolate frosting

  1. Take out 1/4 cup of vanilla frosting and place in a small bowl.
  2. Add 1/2 Tablespoon cocoa powder and mix until combined.

For the yellow frosting

  1. Take out 1/4 cup of vanilla frosting and place in a small bowl.
  2. Add about 5-6 drops of yellow food coloring and mix until combined.

For the green frosting

  1. Add about 12-15 drops of green food coloring to the remaining vanilla frosting.
  2. Frost cupcakes and add sprinkles. Lay out the Christmas tree design on a large platter. Enjoy!

Notes

  • These cupcakes are easy to make ahead and store in the refrigerator, countertop, or even the freezer! Store in an airtight container without the frosting. These store really well and will continue to stay moist. When ready to enjoy, set them out at room temperature. This will help warm them up slowly but still lock in the moisture and not dry them out.
