Curried Chicken Recipe

Wonderful melody of flavors of curry spice complemented by the tart cranberries and sweet chunks of pears in this chicken sandwich. Enjoy with any type of bread or over a bed of salad.

Ingredients

  • 3 chicken breasts cooked and diced
  • 1 cup Greek yogurt
  • 3 teaspoons honey mustard
  • 1 1/2 teaspoon curry powder
  • 1/2 cup dried cranberries
  • 1 large pear diced
  • 4-5 whole wheat pita breads cut in half

Instructions

  1. Combine yogurt, honey mustard, and curry powder in a large bowl. Add diced chicken, pear, and cranberries; toss to combine.
  2. Fill each pita half with chicken mixture.

Notes

  • Serve over salad, wrap in a tortilla, in a sandwich or serve as a dip with pita chips.
