Ingredients

  • 1 lb. raw cashews
  • 1/8 cup. coconut oil
  • 1 tablespoon curry powder
  • 1 teaspoon salt
  • 1/8 teaspoon ground cayenne pepper optional

  1. Preheat your oven to 400 degrees Fahrenheit (204 degrees Celsius).
  2. Place cashews on a large baking sheet and arrange them in a single layer. Roast for 7 to 9 minutes, until slightly golden brown.
  3. Meanwhile, melt the coconut oil in a small saucepan over medium-low heat. Once melted, turn off the heat and stir in the spices.
  4. Place the roasted cashews in a large bowl. Pour the spiced coconut oil over the cashews and toss well to coat. Serve warm or at room temperature.

Notes

  • Store your Cashew Curry in an airtight container at room temperature to maintain freshness; they should stay good for up to two weeks. If you find the nuts have softened over time, you can reheat them to restore crispness.
