Ingredients

  • 3 lb tomatoes , ripe, peeled, seeded and diced
  • 8 oz. Red Onions , cut into 4
  • 2 large red bell peppers , diced
  • ⅔ cup raw cane sugar
  • 1 teaspoon salt
  • 1 teaspoon curry powder
  • ½ cup apple cider vinegar
  • ½ teaspoon cumin
  • 2 cloves
  • salt
  • black pepper , freshly ground

  • Hand mixer
  • Glass jars with airtight closure

Instructions

  1. Place the tomatoes, onions and bell peppers in a saucepan. Add the sugar, salt, all the spices and vinegar.
  2. Bring to a boil over high heat, then lower the heat and simmer covered over low to medium heat for 30 minutes. Stir frequently.
  3. Using a hand mixer, mix all the contents of the saucepan.
  4. Bring the sauce to a boil again.
  5. Simmer covered, over low heat, for about an hour or until the mixture is slightly thick.
  6. Immediately distribute the resulting sauce into jars and close tightly.
  7. Store for approximately 6 months.
