Ingredients
For the Dressing:
- 100 g strained yogurt
- 120 g mayonnaise
- Zest and juice of 1 lime
- 2 tbsp honey
- ½ tsp curry powder
- salt
- pepper
For the Salad:
- 1 red leaf lettuce roughly chopped
- 1 green lettuce roughly chopped
- 2 celery stalks finely chopped
- 1 red apple roughly chopped
- 1 pear roughly chopped
- 60 g sultana raisins
- 170 g canned corn
- 50 g walnuts chopped
Instructions
For the Dressing:
- In a bowl, combine the yogurt, mayonnaise, lime zest, lime juice, honey, curry powder, salt, and pepper. Stir with a spoon until the dressing is smooth and well-blended.

For the Salad:
- In a large bowl, mix together the red lettuce, green lettuce, celery, apple, pear, sultanas, corn, and walnuts.
- Drizzle the dressing over the salad and toss gently with your hands, wearing disposable gloves. Serve immediately.
