Curry Spiced Roasted Carrots

Curry Spiced Roasted Carrots are the perfect way to add some spice to your life!  Fresh carrots perfectly seasoned with warm spices like curry powder, turmeric, and garlic make a super flavorful vegetable that is the perfect side dish for fall!

Ingredients

  • 6-8 large carrots cut in half, then cut each in half lengthwise
  • 2 tbsp olive oil
  • 1/2 tbsp curry powder
  • 1/4 tsp Turmeric
  • 1/4 tsp garlic powder
  • couple dashes of cayenne pepper optional
  • salt & pepper

Instructions

  1. Preheat oven to 400° and either grease a baking sheet or line a baking sheet with parchment paper or foil.
  2. In a small bowl, add olive oil with all the seasonings and mix well. Add carrots to a large bowl and pour the oil over them and mix until carrots are well-seasoned. Add the carrots to your prepared baking sheet and bake for 15 minutes or until tender. Enjoy!
