Curtido

Curtido is a Salvadorian condiment made from cabbage and carrots, pickled in vinegar with spices, which is often served with pupusas.

Ingredients

  • 1 lb cabbage , shredded
  • 2 large carrots , shredded
  • 1 onion , thinly sliced
  • 1 cup apple cider vinegar
  • 1 tablespoon salt
  • 1 tablespoon dried oregano
  • 1 tablespoon crushed red pepper
  • 2 bay leaves

Instructions

  1. Place cabbage, carrots and onion in a pot of boiling water, and cover for 10 minutes.
  2. Drain while leaving some water in the pot.
  3. Sprinkle with salt, oregano, crushed red pepper and bay leaves.
  4. Transfer to a sterilized mason jar, cover with apple cider vinegar, then seal.
  5. Refrigerate for at least 2 hours, preferably 6 to 8 hours before serving.
