Curtido

Curtido is a Salvadorian condiment made from cabbage and carrots, pickled in vinegar with spices, which is often served with pupusas.

Ingredients
- 1 lb cabbage , shredded
- 2 large carrots , shredded
- 1 onion , thinly sliced
- 1 cup apple cider vinegar
- 1 tablespoon salt
- 1 tablespoon dried oregano
- 1 tablespoon crushed red pepper
- 2 bay leaves
Instructions
- Place cabbage, carrots and onion in a pot of boiling water, and cover for 10 minutes.
- Drain while leaving some water in the pot.
- Sprinkle with salt, oregano, crushed red pepper and bay leaves.
- Transfer to a sterilized mason jar, cover with apple cider vinegar, then seal.
- Refrigerate for at least 2 hours, preferably 6 to 8 hours before serving.
