  1. Slice the potato in half lengthwise, using a sharp knife.
  2. Place the cut side of the potato down on a cutting board and slice again in half lengthwise.
  3. Cut each quarter in half again to make eight wedges. If the potatoes are very large, you may have to cut the pieces into smaller wedges.
