Dairy Free Chicken Alfredo

A creamy, chicken slow cooker meal your family will fall in love with! This crockpot chicken alfredo recipe is easy to whip up for busy weeknights!

Ingredients

  • 3 boneless, skinless, chicken breasts
  • 1 tbs arrowroot powder
  • 3 cups chicken broth warmed (see notes)
  • ½ cup coconut milk canned
  • 2 cloves garlic
  • 1 teaspoon onion powder
  • ⅛ cup nutritional yeast plus more for topping
  • ½ teaspoon salt
  • ½ cup dairy-free cheese shredded
  • 2 cups frozen peas
  • ½ cup sundried tomatoes chopped
  • 227 grams quinoa rice noodles fussili is best

Instructions

  1. Chop the chicken into bite-sized chunks.
  2. Add it into a large plastic baggie along with the arrowroot powder. Toss until chicken is coated.
  3. In the slow cooker, whisk together the broth, coconut milk, garlic, onion powder, nutritional yeast, salt, and dairy-free cheese.
  4. Add in the chicken and mix to combine. Cover and cook on low for 5-6 hours.
  5. Thirty minutes before serving, add in the peas, sundried tomatoes, and rice noodles. Stir and ensure all the noodles are combined.
  6. There should still be a lot of liquid in the slow cooker, if not, add in ¼ cup of water.
  7. Cover and cook on low for 30-45 minutes or until noodles are tender.
  8. Top with vegan parmesan cheese or more nutritional yeast if desired!

Notes

  • I find Earths Island vegan cheese works the best.
  • Use one scoop of Perfect Supplements Chicken Broth Powder to three cups of water for the recipe.
  • When it’s time to put the noodles into the crock pot chicken alfredo, you should still have liquid left in the slow cooker. However, if it doesn’t look like enough, add in ¼c of water.
  • You want to really stir the ingredients when you add the noodles and cook covered. This is so that the noodles cook accordingly.
  • You can use bagged or oil-based sundried tomatoes. Chop them finely. If you use oil-based ones, make sure to drain them first.
  • Keep an eye on the crock pot chicken alfredo mixture in the last 15 minutes and remove from the heat as soon as the noodles are tender and the liquid is absorbed. Otherwise, it’ll get too dry.
