  • 2 cups rolled oats (205 grams)
  • 2 coops plant-based vanilla protein powder 76 grams, Optimum Nutrition brand
  • 3/4 cup cranberries 75 grams, fresh, chopped
  • 1/4 cup dried cranberries 40 grams, 50% Reduced Sugar Ocean Spray brand, chopped
  • 2 tbsp light brown sugar (24 grams)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 cup applesauce 246 grams, unsweetened
  • 1/2 cup almond milk 4 oz, unsweetened vanilla
  • 1/4 cup maple syrup (2 oz)
  • 2 tbsp orange juice 1 oz, Trop 50 brand
  • 1 egg
  • 1 egg white
  • 2 tbsp orange zest
  • 1 tsp vanilla extract

Instructions

  1. Pre-heat oven to 350 degrees.  Arrange 7 jumbo silicone baking cups on a baking sheet and set aside.
  2. Mix all dry ingredients in a bowl, then add wet ingredients and mix until combined.
  3. Bake for 35-40 minutes or until tops begin to turn golden brown.
