Ingredients

  • ½ Dragon Fruit
  • ⅓ cup frozen pineapple
  • 4 frozen strawberries or ¼ cup raspberries
  • ¼ cup collagen powder
  • ⅓ cup full-fat coconut milk

Instructions

    Cup of Yum
  1. Pop all the ingredients into a high-powered blender adding the dragon fruit first.
  2. Blend for 1-2 minutes until combined and creamy. You may need to use a tamper.
  3. Pour into a big bowl and top with your favorite fresh fruit, nut butter, or toasted coconut flakes.

Notes

  • Most smoothie bowls use frozen bananas to make them thick. In an effort to have some options, this dragon fruit smoothie bowl uses pineapple instead. However, know that you can sub it out if you wish.
  • Frozen mango works great in place of pineapple. Likewise, frozen strawberries replace raspberries well.
  • If using strawberries know that the color of the smoothie bowl will be lighter.
  • This smoothie bowl makes 1 large or two smaller servings. Since the only liquid is coconut milk, if you want to scale back on calories for a large serving, split the coconut in half with almond milk.
  • Though you can use frozen dragon fruit, you will need to add a splash of almond milk to the recipe.
