Dairy-Free Paletas de Horchata

Horchata is a creamy cinnamon infused rice agua fresca that becomes a great dessert when frozen into paletas.

Ingredients

  • 1 cup water
  • 1 cup superfine sugar
  • 2 cinnamon sticks
  • 1 1/4 cup vanilla rice milk
  • ground cinnamon for garnish

Instructions

  1. Bring water to a boil over high heat, add sugar and mix while it melts, about 1 minute. Remove from heat, add cinnamon sticks, cover, and let steep for about 30 minutes.
  2. Discard cinnamon sticks.
  3. In a mixing bowl combine cinnamon-infused simple syrup and rice milk.
  4. Fill six ice pop molds. Place in the freezer for about 4 hours or overnight.
  5. Sprinkle with ground cinnamon.

Notes

  • I used vanilla rice milk for this recipe, making these paletas dairy free, quick and easy, and it also avoids any settling or separation when making paletas.
