Dairy Free Vegan Chocolate Valentine Truffles
These truffles combine full-fat coconut milk and dark chocolate into creamy, rich balls rolled in cocoa powder. The coconut milk gently melts the chocolate into a smooth ganache that chills until firm, then is scooped and dusted with cocoa for a slightly bitter contrast. The agave syrup adds subtle sweetness without dairy or animal products, making this recipe suitable for vegans and those avoiding dairy. The texture is silky and indulgent, perfect for a special occasion treat.
Ingredients
- 3/4 cup coconut milk full fat; canned
- 2 tablespoons agave syrup or honey
- 1 1/4 cups dark chocolate morsels 7 ounces, enjoy life foods brand
- cocoa powder for rolling
Instructions
- Stir together the coconut milk and honey in a large pot on medium heat, cooking it until it JUST begins to steam, make sure you don't let it boil.
- Once steaming, remove from the heat and add in the dark chocolate morsels. Let them stand, without stirring, for 30 seconds. Then, whisk until the chocolate is smooth and melted.
- Pour the mixture into a small bowl and lay a piece of saran wrap right over top of the chocolate. This prevents a skin from forming on top. Refrigerate until the chocolate is set, about 2-3 hours.
- Once set, use a cookie scoop to from into balls and roll into cocoa powder (it'll be a bit messy!)

Notes
- Add more agave syrup or use semi-sweet chocolate for a sweeter truffle.
- Store truffles in an airtight container in the refrigerator for up to one week.
