  • 3/4 cup coconut milk full fat; canned
  • 2 tablespoons agave syrup or honey
  • 1 1/4 cups dark chocolate morsels 7 ounces, enjoy life foods brand
  • cocoa powder for rolling

Instructions

  1. Stir together the coconut milk and honey in a large pot on medium heat, cooking it until it JUST begins to steam, make sure you don't let it boil.
  2. Once steaming, remove from the heat and add in the dark chocolate morsels. Let them stand, without stirring, for 30 seconds. Then, whisk until the chocolate is smooth and melted.
  3. Pour the mixture into a small bowl and lay a piece of saran wrap right over top of the chocolate. This prevents a skin from forming on top. Refrigerate until the chocolate is set, about 2-3 hours.
  4. Once set, use a cookie scoop to from into balls and roll into cocoa powder (it'll be a bit messy!)

  • Add more agave syrup or use semi-sweet chocolate for a sweeter truffle.
  • Store truffles in an airtight container in the refrigerator for up to one week.
