Dalgona Matcha Recipe

Dalgona Matcha is a trendy drink that’s sweet, fluffy and creamy! Topped with beautiful green tea matcha foam, this whipped matcha latte is taking social media by storm right now. It’s only 4 ingredients and takes about5 minutes with a hand mixer! You can make it with or without eggs!

Ingredients

  • 2/3 cup granulated sugar
  • 1/4 cup water
  • 2 large egg whites* (room temperature, see notes for the egg-free version)
  • 1 tablespoon matcha powder (plus more for serving)
  • 4 cups milk of your choice**
  • ice optional

  1. Make Simple Syrup: Add sugar and water into a medium saucepan or skillet. Bring to boil, and stir until the sugar is completely dissolved. Cover with a lid and then simmer for 3-4 minutes until the syrup has thickened. (Make sure the syrup is nice and thick before adding to the egg whites.)
  2. Beat the Egg Whites: In a large bowl, use a hand mixer to whip the egg whites until slightly frothy. Pour in the hot simple syrup and keep beating until it forms soft peaks.
  3. Make Whipped Matcha: Sieve the green tea matcha powder into the bowl. Continue to beat until everything is combined. Avoid overbeating, otherwise, the mixture can get runny.
  4. Serve the Drink: It can be either served hot or cold. For the cold serving, add ice cubes into the glass, pour in the milk. Then top with the whipped Matcha. For the hot serving, fill the glass with hot milk and top with the whipped match. You can sprinkle with more matcha powder on top. Stir together and enjoy!

Notes

  • *No egg version: Replace the egg white with the liquid from a can of chickpeas (15oz). Add the liquid to a mixer and beat until it forms stiff peaks.
  •  **Choice of milk: You can use any milk for this recipe. Some popular choices include almond milk, coconut milk, whole milk, and skim milk.
  • For the alcoholic version: simply add a shot of the liquor of your choice to the glass with ice and milk, and top it off with the whipped matcha. Some good choices include dark rum, whiskey, cognac, bourbon, etc.
  • Use more milk and less matcha cream if you’d prefer a less sweet drink.
  • If you don’t have a hand mixer, you can whisk by hand. Make sure to let your egg whites come to room temperature first. You’ll need to whisk vigorously until they’re foamy before adding sugar.
  • The matcha mix can be re-whipped if all was not served at the time of use. It can be kept in the fridge then whisked again for about a minute before pouring it over your milk.
