Date Nut Overnight Oats

Date nut overnight oats made with healthy steel cut oats, sweet dates, and crunchy walnuts is ready when you wake up on a frosty morning!

Ingredients

  • 1 cup steel cut oats
  • salt
  • 1 vanilla bean, split optional
  • brown sugar to taste
  • 2 Tbsp walnuts chopped
  • 2 Tbsp pitted dates chopped
  • milk or half and half

Instructions

  1. Bring 3 1/2 cups water and a pinch of salt to a boil in a pot. Stir in the oats and the vanilla bean. Turn OFF the heat, and cover the pan. Let the pan sit on the stove overnight.
  2. In the morning, simply remove the vanilla bean, reheat the oatmeal and ladle into bowls. Top with a little brown sugar, and the chopped dates and walnuts. Add cream, milk, or half and half as you like.
