Date Rolls

Date rolls are made with soft, chewy Medjool dates, almonds and coconut for a rich and delicious sweet treat with no added sugar.

Ingredients

  • 400 g Medjool dates (usually 20 dates) pitted
  • 100 g whole almonds
  • ¼ cup desiccated coconut

Instructions

    Cup of Yum
  1. Add almonds to the bowl of a food processor, and process until chopped.
  2. Add in dates and continue to process (scraping down the sides as needed) until dates are chopped and the mixture comes together.
  3. Shape the date mixture into 16 small logs.
  4. Place coconut in a shallow bowl and individually roll each log in coconut to coat.

Notes
