Ingredients

  • 1 pound fresh green beans trimmed
  • vegetable oil for frying
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1 cup panko breadcrumbs

  1. Blanch the green beans in boiling water for 2 minutes, then immediately plunge them into ice water to stop the cooking process. Drain and dry thoroughly.
  2. Heat the oil in a deep-fryer or large saucepan to 350°F.
  3. Prepare three bowls: one with flour, one with beaten egg, and one with panko breadcrumbs. Coat the green beans in flour, dip in egg, then press into breadcrumbs.
  4. Fry the coated green beans in batches until golden brown, about 3-5 minutes. Drain on paper towels.
