Dehydrated Mashed Potatoes

Ingredients

  • 4 pounds potatoes
  • water to cover
  • 1 teaspoon salt
To rehydrate
  • ⅔ cup milk or water
  • 1 tablespoon sour cream optional
  • salt to taste

Instructions

  1. Peel potatoes. immediately add them to a pot with cold water to deter browning.
  2. Cut them into pieces so that they will cook faster.
  3. Add salt. Bring them to a boil in a large, covered pot, over high heat. Reduce heat to a low boil until the potatoes are tender.
  4. Drain. Reserve a cup of the cooking liquid.
  5. Mash with a potato masher or a hand mixer with a bit of the cooking water.
  6. Make the consistency thicker than you normally would when you are mashing.
To Rehydrate the Potatoes
  1. To rehydrate for two servings, boil ⅔ cup of water or milk with one tablespoon of butter. Remove from the heat and stir in ⅔ cup of dehydrated potatoes. Mix with more butter, milk, salt, or sour cream. Garnish with chives.

Notes

  • It makes about 3 cups of instant mashed potatoes or nine servings.
