Dehydrated Pineapple

This is a food dehydrator recipe to make dried pineapple.

  • 1 large pineapple fresh

  1. Trim off the green leaves and slice off the top of the pineapple.
  2. Cut off the peel as well as possible. Also, cut out the pokey dark holes.
  3. Cut pineapple around the core. I don't use the core.
  4. Slice pineapple into equal thick pieces.
  5. Place pineapple pieces into a colander (and with a bowl under the colander) and gently press the pineapple so that excess juices come out.
  6. Turn on your food dehydrator and arrange your pineapple chunks next to each other on the racks.
  7. Place one rack over the other and make sure the pineapple pieces are not overlapping in the rack.
  8. Dry for about 12-14 hours or until you are satisfied with the result. I left mine for 14 hours and turned the pieces in between.
  9. Store in a cool, dry and dark place away from direct sunlight and humid places. Use airtight containers, glass jar or vacuum bags.
