Ingredients

  • 3 large eggs
  • 2 tablespoons whole milk
  • 1 tablespoon unsalted butter
  • 1/2 cup diced ham
  • 2 tablespoons yellow onion , diced
  • 2 tablespoons green bell pepper , diced
  • 1/4 teaspoon kosher salt
  • 1 pinch coarse ground black pepper
  • 1/2 cup cheddar cheese , shredded

Instructions

  1. Whisk eggs and milk in a medium bowl until well blended.
  2. Add butter to a medium skillet over medium-high heat.
  3. Add ham, onion, green bell pepper, salt, and pepper and cook for 3-4 minutes until vegetables soften.
  4. Remove vegetables, add in the eggs, and lower heat to medium-low.
  5. Let eggs cook for 2 minutes then loosen eggs from the pan with a spatula, running in under the eggs (do not break apart eggs).
  6. Add cheese and vegetables to one-half of the eggs and using the spatula fold the eggs over into a half-circle shape.
  7. Cook for 2 minutes to finish cooking the middle of the eggs and carefully remove to plate with a spatula.
