Deviled Egg Salad

Ingredients

  • 8 large eggs
  • 1/3 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup dill pickle relish
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place eggs in a saucepan and cover with water. Bring to a boil, then cover and remove from heat. Let sit for 12 minutes.
  2. Transfer eggs to an ice bath and let cool for 5 minutes, then peel.
  3. Halve eggs, remove yolks, and place yolks in a bowl. Add mayonnaise, mustard, and relish, and mash until smooth.
  4. Chop egg whites and add to yolk mixture. Season with paprika, salt, and pepper. Mix well.
  5. Serve chilled or at room temperature.
