Dill Pickle Dip

Ingredients

For the dip:
  • 2 cups plain Greek yogurt, or sour cream
  • 1 1/2 cups diced dill pickles
  • 2 tablespoons pickle juice
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried chives
  • Freshly ground black pepper, to taste
  • For garnish: fresh dill, fresh chives, and extra chopped pickles
  • For serving: Potato chips and cut up vegetables
Optional fried dill pickle dip breadcrumbs:
  • 1 tablespoon salted butter
  • 1 clove garlic, minced
  • 1/2 cup panko breadcrumbs

Instructions

  1. In a medium bowl, combine the Greek yogurt (or sour cream), pickles, pickle juice, dill, parsley, garlic powder, onion powder, chives, and pepper.
  2. If you are making the fried dill pickle dip topping, heat the butter in a small skillet over medium heat. Once the butter is melted, add the garlic and cook for 1 minute. Stir in the panko breadcrumbs and cook until toasted, stirring occasionally, about 3 to 4 minutes. Transfer the breadcrumbs to a plate and let cool to room temperature.
  3. If using the breadcrumbs, stir half into the dip and garnish with the remaining breadcrumbs. Garnish with fresh dill, chives, and extra pickles. Serve with potato chips and/or cut up vegetables.
