Ingredients
For the dip:
- 2 cups plain Greek yogurt, or sour cream
- 1 1/2 cups diced dill pickles
- 2 tablespoons pickle juice
- 1 teaspoon dried dill
- 1 teaspoon dried parsley
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried chives
- Freshly ground black pepper, to taste
- For garnish: fresh dill, fresh chives, and extra chopped pickles
- For serving: Potato chips and cut up vegetables
Optional fried dill pickle dip breadcrumbs:
- 1 tablespoon salted butter
- 1 clove garlic, minced
- 1/2 cup panko breadcrumbs
Instructions
- In a medium bowl, combine the Greek yogurt (or sour cream), pickles, pickle juice, dill, parsley, garlic powder, onion powder, chives, and pepper.
- If you are making the fried dill pickle dip topping, heat the butter in a small skillet over medium heat. Once the butter is melted, add the garlic and cook for 1 minute. Stir in the panko breadcrumbs and cook until toasted, stirring occasionally, about 3 to 4 minutes. Transfer the breadcrumbs to a plate and let cool to room temperature.
- If using the breadcrumbs, stir half into the dip and garnish with the remaining breadcrumbs. Garnish with fresh dill, chives, and extra pickles. Serve with potato chips and/or cut up vegetables.
