Ingredients

  • 8 ounces rotini pasta
  • 1 cup dill pickles chopped
  • 1 cup cheddar cheese diced
Dressing
  • ½ cup mayonnaise
  • ½ cup sour cream
  • ¼ cup pickle juice
  • 2 tablespoons fresh dill chopped
  • 1 tablespoon ketchup
  • 1 teaspoon yellow mustard
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • salt to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente. Drain and run under cold water to stop the cooking and cool the pasta.
  2. While the pasta cooks, whisk together the dressing ingredients in a small mixing bowl. Check the seasoning and add salt to taste.
  3. Add the pasta, pickles, and cheese into a large mixing bowl. Pour on the dressing and mix until everything is coated.
  4. Chill in the fridge until ready to serve. (see note)

Notes

  • The pasta will soak in the dressing after a while and the salad will seem “dryer”. To refresh, just add some more pickle juice and stir again.
