Ingredients
- 2 pounds small potatoes (see note 1)
- 2 tablespoons olive oil
- 1½ tablespoons dill seasoning (see note 2)
Instructions
- Preheat your oven to 400ºF/200ºC.
- Cut the potatoes in half or quarters (if they're large), place them in a mixing bowl with the olive oil, and toss them to coat.
- Transfer the potatoes to a roasting tin, ensuring they are in a single layer.
- Roast the potatoes for 45-55 minutes until golden and crispy.
- As soon as the potatoes come out of the oven, toss them with the dill seasoning mix and serve. (see note 3)

Notes
- Pick a medium starch potato like Yukon Gold, Dutch Cream, Desiree, Maris Piper, or Vivaldi.
- You can buy dill seasoning in the stores, but I make my own blend with this recipe.
- Sprinkling over the dill seasoning as soon as the potatoes come out of the oven means it will stick to the hot oil and infuse the potatoes with flavor.
