Ingredients

  • 1 lb Russet potatoes diced into 1" pieces
  • 2 tbsp olive oil
  • 2-3 tbsp Cajun Seasoning
  • 2 tbsp unsalted butter
  • 7 eggs
  • 1 cup shredded cheese
  • 1 cup salsa

Instructions

  1. Heat oven to 450F.
  2. Add diced potatoes onto a sheet pan, coat with olive oil and cajun seasoning. Mix with your hands until the potatoes have been coated and spread them out in a single layer before baking for 50 minutes.
  3. To make the scrambled eggs, whisk together the eggs, melt butter in a non-stick pan, and add the eggs to it. Add a pinch of salt and stir the egg mixture until scrambled and cooked through.
  4. Once everything is done, put together the bowls by adding the roasted cajun potatoes on the bottom, then eggs, shredded cheese, and salsa.
  5. Enjoy or let cool before storing in the fridge for up to 5 days.
