Ingredients
- 1 lb red beans , cooked
- ⅔ cup long-grain white rice
- 4 tablespoons butter
- 3 tablespoons olive oil
- 1 large onion , chopped
- 1 green bell pepper , diced
- 4 cloves garlic , pressed
- ½ cup tomato puree
- 1 teaspoon thyme
- 2 whole cloves
- 1 bay leaf
- 2 cups water (or chicken or vegetable broth)
- 2 Scotch bonnet peppers
- salt
- black pepper , freshly ground
- Prepared Haitian épis (Haitian marinade, without any acidic component)

Instructions
- Heat olive oil in a large Dutch oven over medium heat.
- Add onion and bell pepper and sauté until onion is translucent.
- Add the garlic and sauté for 2 minutes, stirring regularly.
- Add the tomato purée, beans, thyme, cloves, bay leaf and Scotch bonnet peppers. Mix well.
- Cover and simmer over low to medium heat for 10 minutes.
- Add the rice, water or broth, épis, and season with salt and pepper to taste.
- Bring to a boil over medium heat, then reduce heat to low.
- Add the butter, mix well, then cover and simmer for about 15 minutes or until the rice is cooked through.
- Remove from heat and let stand, covered, for 10 minutes.
- Stir gently with a fork and serve.
