Ingredients

  • 1 lb red beans , cooked
  • cup long-grain white rice
  • 4 tablespoons butter
  • 3 tablespoons olive oil
  • 1 large onion , chopped
  • 1 green bell pepper , diced
  • 4 cloves garlic , pressed
  • ½ cup tomato puree
  • 1 teaspoon thyme
  • 2 whole cloves
  • 1 bay leaf
  • 2 cups water (or chicken or vegetable broth)
  • 2 Scotch bonnet peppers
  • salt
  • black pepper , freshly ground
  • Prepared Haitian épis (Haitian marinade, without any acidic component)

Instructions

  1. Heat olive oil in a large Dutch oven over medium heat.
  2. Add onion and bell pepper and sauté until onion is translucent.
  3. Add the garlic and sauté for 2 minutes, stirring regularly.
  4. Add the tomato purée, beans, thyme, cloves, bay leaf and Scotch bonnet peppers. Mix well.
  5. Cover and simmer over low to medium heat for 10 minutes.
  6. Add the rice, water or broth, épis, and season with salt and pepper to taste.
  7. Bring to a boil over medium heat, then reduce heat to low.
  8. Add the butter, mix well, then cover and simmer for about 15 minutes or until the rice is cooked through.
  9. Remove from heat and let stand, covered, for 10 minutes.
  10. Stir gently with a fork and serve.
