Ingredients
- 1 teaspoon olive oil
- 1 cup onions (chopped)
- ½ teaspoon kosher salt
- ¼ cup gin (or vodka - whatever the alcohol is for your martini of choice!)
- 2 cups plain whole milk Greek yogurt (don’t use fat-free here)
- 2 tablespoons light mayonnaise
- ½ cup chopped martini olives (plus more for garnish)
- 2 teaspoons martini olive brine
- ½ tsp fresh cracked black pepper
- 1 teaspoon lemon zest
- ¼ cup Gorgonzola cheese (or blue cheese, plus optional more for topping)
Instructions
- Add olive oil to a small saute over medium heat; add onions & salt. Saute until browned but still with a bite. Add alcohol of your choice and cook out until almost dry. Set aside to cool.
- In a medium bowl combine Greek yogurt, mayonnaise, olives, olive brine, black pepper & sauteed onions, add gorgonzola.
- Spoon dip into a dish; top with lemon zest and olives.
- Serve with crudites and your favorite cracker or chip!

Notes
- Green olives stuffed with a pimento are ideal but other green olives likecastelvetrano or manzanilla work just fine.
- Serve with your favorite pretzels, chips or crunchy crudites like endive,cucumber or radish.
