Ingredients

  • 1 ¾ Cup all-purpose flour
  • ½ Cup granulated sugar
  • ¼ Cup brown sugar (packed)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 large egg
  • 1 teaspoon vanilla
  • ¾ Cup buttermilk
  • 1/3 Cup vegetable oil
Topping
  • 1/3 Cup granulated sugar
  • 2 Teaspoons cinnamon
  • 1/3 Cup salted butter Melted

Instructions

  1. Preheat the oven to 350°. Spray a muffin tin with nonstick spray and set aside.
  2. In a large bowl, whisk together the flour, sugar, brown sugar, baking powder, baking soda, salt, cinnamon and nutmeg.
  3. In a medium bowl whisk, whisk together the egg, buttermilk, and vegetable oil. Add the wet ingredients to the dry and mix until just fully combined.
  4. Scoop the batter into the muffin pan, filling the cups 2/3 of the way full. Bake for 18-20 minutes. Let the muffins cool for a few minutes before removing them from the pan to finish cooling on a cooling rack.
  5. In a small bowl, whisk together the sugar and cinnamon for the topping. Melt the butter in another small bowl.
  6. For the topping you can dip just the top of the muffin in the butter and cinnamon sugar or you can dip the whole muffin in both for a little extra cinnamon sugar.
