Ingredients

  • 4 medium bananas very ripe
  • 2 large eggs
  • 6 tablespoons salted butter melted
  • 1/2 cup brown sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup chocolate chips milk or semi sweet

  1. Preheat the oven to 350°F (175°C). Position the oven rack in the center. Lightly grease an 8x4 inch loaf pan with nonstick spray or butter and set it aside.
  2. In a large bowl, use a fork to mash 4 medium bananas until almost smooth. Add 2 large eggs to the bananas and whisk until fully combined. Then, whisk in the melted butter.
  3. Once combined, whisk in 1/2 cup brown sugar, 1/2 cup unsweetened cocoa powder, and 1 teaspoon vanilla extract. Use a rubber spatula to stir in 3/4 teaspoon baking soda, 1/4 teaspoon baking powder, and 1/4 teaspoon salt.
  4. Gradually add 1 1/2 cups all-purpose flour, stirring gently after each addition. Be careful not to overmix the batter. Fold in 1 cup chocolate chips until evenly distributed.
  5. Pour the batter into the prepared loaf pan. Smooth the top with a spatula. Bake for 40 to 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean or with a few moist crumbs. Start checking at the 40-minute mark.
  6. Remove the bread from the oven and allow it to cool in the pan on a wire rack for about 20 minutes. After 20 minutes, carefully remove the loaf from the pan and allow it to cool completely on the wire rack before slicing.
