Ingredients

  • ¾ cup (98 grams) rolled oats old-fashioned
  • 1 ½ (160 grams) banana ripe
  • 1 cup whey protein powder use code EBF for 10% off, chocolate flavor
  • ½ cup almond milk plus more as needed to blend, unsweetened
  • 2 large egg
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ cup (52 grams) dark chocolate chips plus more for topping*

Instructions

  1. Preheat oven to 350°F.
  2. Add oats, banana, chocolate protein powder, almond milk and eggs into a high powdered blender and blend until smooth. Add baking soda and baking powder. Blend until combined.
  3. Use a spatula to stir in chocolate chips and then transfer muffin mix into prepared muffin tin lined with paper or silicone liners. Muffin cavities should be filled about 3/4 of the way up and you should be able to fill 12 muffin cups. Sprinkle extra chocolate chips on top of each muffin.
  4. Bake muffins for 20 minutes or until a toothpick comes out clean.

Notes

  • Use chocolate-flavored whey protein powder for best texture; plant-based powders may absorb too much liquid.
  • Select low-sugar dark chocolate chips like Hu Kitchen’s or Lily’s to keep sugar content lower.
  • Mix the batter thoroughly but avoid over mixing after adding chocolate chips to maintain muffin softness.
