Ingredients
For the Double Chocolate Waffles
- 2 cups all-purpose flour
- ½ cup cocoa powder unsweetened
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 3 egg separated
- ¼ cup light brown sugar packed
- 2 cups buttermilk
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
- 4 tablespoons unsalted butter melted
- ½ cup chocolate chips
Optional Toppings
- berries fresh, about 1 pint
- vanilla ice cream
- confectioners' sugar for dusting
- chocolate sauce
- Whipped Cream
Instructions
- In a large bowl, combine the flour, cocoa powder, baking powder, baking soda and salt.
- In a separate bowl whisk the egg yolks and brown sugar until smooth. Whisk in the buttermilk, oil and vanilla extract.
- Add the wet ingredients into the dry ingredients and mix until combined. Add the melted butter and chocolate chips and mix to combine.
- In a medium bowl whip the egg whites until soft peaks form. Gently fold the egg whites into the batter until combine. Do not overmix!
- Heat a waffle iron according to manufacturer’s directions. Spray the grates with cooking spray to prevent the waffles from sticking.
- Add batter in each grate (about ¼ cup on each), close and cook for about 5 minutes or until crispy and cook through. Repeat with the remaining batter.
- Serve with your toppings of choice.
