Double Chocolate Zucchini Bread

What do you get when you combine chocolate and zucchini? The most amazing Double Chocolate Zucchini Bread!

Ingredients

  • 3 eggs
  • 1 cup vegetable oil
  • 3 teaspoons vanilla
  • 2 cups zucchini peeled and grated
  • 2 cups granulated sugar
  • 1 teaspoon instant coffee granules
  • 3 cups flour
  • ⅛ cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 tsp cinnamon
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. In a bowl, combine eggs, vegetable oil, vanilla, zucchini, sugar and coffee. Mix together and set aside.
  3. In another bowl, mix together the remaining ingredients.
  4. Pour the wet mixture into the dry mixture and stir until combined. Be careful not to over-mix the batter.
  5. Spray two loaf pans with non-stick cooking spray.
  6. Divide the batter evenly between the two pans.
  7. Bake at 350 degrees for 55-60 minutes.
