Ingredients

  • 2 cups frozen dragon fruit cubed
  • 1 ripe banana sliced
  • 1 cup coconut milk
  • 1/2 cup plain greek yogurt
  • 1 tablespoon honey
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon vanilla extract
  • Optional toppings: fresh dragon fruit slices chia seeds, shredded coconut

Instructions

  1. In a blender, combine the frozen dragon fruit, sliced banana, coconut milk, Greek yogurt, honey, lime juice, and vanilla extract.
  2. Blend the ingredients on high speed until smooth and creamy, about 1-2 minutes. If the smoothie is too thick, add more coconut milk or a splash of water to achieve the desired consistency.
  3. Taste the smoothie and adjust the sweetness by adding more honey if needed.
  4. Pour the smoothie into two glasses and garnish with optional toppings like fresh dragon fruit slices, chia seeds, or shredded coconut.
  5. Serve the Dragon Fruit Smoothie immediately.

Notes

  • If the smoothie is too thick, just add a bit more coconut milk to thin it out.
