Drunken Noodles (Pad Kee Mao) with Ground Turkey

Ingredients

  • 8 ounces wide rice noodles
  • 1/4 cup liquid aminos
  • 3 Tbsp water
  • 3 Tbsp oyster sauce
  • 2 tsp fish sauce
  • 1 Tbsp coconut sugar
  • 1 tsp Sriracha optional
  • 3 Tbsp avocado oil
  • 1 lb ground turkey
  • 2 Thai chilis de-seeded and minced
  • 4 cloves garlic
  • 1 bunch green onion chopped
  • 1/2 cup fresh basil chopped

Instructions

  1. Cook noodles according to package instructions and set aside until ready to use.
  2. Stir together the liquid aminos, water, oyster sauce, fish sauce, coconut sugar, and sriracha in a small bowl and set aside.
  3. Heat the avocado oil in a large skillet or wok and add the ground turkey. Allow it to brown without touching for 3 minutes. Flip and allow the other side to brown another 3 minutes. Use a spatula to break up the meat.
  4. Add the Thai chilies, garlic and green onion and continue cooking another 3 minutes. Add the sauce and bring to a full boil before adding the noodles.
  5. Continue cooking until most of the sauce has been absorbed and noodles begin to stick to the pan, about 8 to 15 minutes.
  6. Stir in the fresh basil and serve.
