Dubai Chocolate Rice Krispie Squares with Pistachio & White Chocolate

These Dubai-inspired chocolate Rice Krispie squares with pistachio, white chocolate & kataifi pastry fare a delicious and crunchy, chocolate treat.

Ingredients

  • 450 grams white chocolate 3 x 150-gram slabs
  • 6 Tbsp pistachio butter approx 90 - 100 grams
  • 3 cups Rice Krispies
  • 1 cup kataifi pastry toasted
  • 100 grams dark chocolate
  • 100 grams milk chocolate
  • 15 grams pistachio roughly chopped
  • sea salt flakes, a sprinkle

Instructions

  1. Break the white chocolate into smaller pieces and place them in a bowl set over a pot of boiling water. Alternatively, melt the chocolate in the microwave.
  2. Add the pistachio nut butter to the melted chocolate and mix until well combined.
  3. Add the rice crispies and toasted kataifi pastry to the melted chocolate and mix to combine.
  4. Tip the mixture into a lined 20cm x 20cm square baking tin and press down to evenly distribute. Allow to cool and set (you can speed this up by placing the tin in the fridge or freezer).
  5. Melt the dark and milk chocolate together (either in a double boiler or in the microwave). Pour the chocolate over the cooled and set rice crispy mixture and spread to evenly coat the top.
  6. Sprinkle over the chopped pistachios and salt.

Notes

  • Storage Instructions
  • At room temperature: Store in an airtight container for up to 2 weeks.
  • In the fridge: It is not necessary to store these Rice Krispie treats in the fridge as they could lose their crunch.
