Ingredients
- 450 grams white chocolate 3 x 150-gram slabs
- 6 Tbsp pistachio butter approx 90 - 100 grams
- 3 cups Rice Krispies
- 1 cup kataifi pastry toasted
- 100 grams dark chocolate
- 100 grams milk chocolate
- 15 grams pistachio roughly chopped
- sea salt flakes, a sprinkle
Instructions
- Break the white chocolate into smaller pieces and place them in a bowl set over a pot of boiling water. Alternatively, melt the chocolate in the microwave.
- Add the pistachio nut butter to the melted chocolate and mix until well combined.
- Add the rice crispies and toasted kataifi pastry to the melted chocolate and mix to combine.
- Tip the mixture into a lined 20cm x 20cm square baking tin and press down to evenly distribute. Allow to cool and set (you can speed this up by placing the tin in the fridge or freezer).
- Melt the dark and milk chocolate together (either in a double boiler or in the microwave). Pour the chocolate over the cooled and set rice crispy mixture and spread to evenly coat the top.
- Sprinkle over the chopped pistachios and salt.
Notes
- Storage Instructions
- At room temperature: Store in an airtight container for up to 2 weeks.
- In the fridge: It is not necessary to store these Rice Krispie treats in the fridge as they could lose their crunch.
