Dulce De Leche Sandwich Cookies

Dulce De Leche Sandwich Cookies feature a crumbly cookie dough made from butter, powdered sugar, egg yolks, flour, and baking powder, rolled thin and cut into shapes. After baking, the cookies are paired with a creamy dulce de leche filling, then half-dipped in chocolate mixed with coconut oil for a glossy finish. Crushed nuts sprinkled on the chocolate add a crunchy contrast. This recipe is suited for creating rich, layered sandwich cookies with a caramel-flavored center and a chocolate-nut coating.

Description

The cookie dough is prepared by creaming together butter, sugar, and egg yolks, then mixing in baking powder and flour until crumbly. It is divided, rolled to a quarter-inch thickness, and cut into cookie shapes. Once baked and cooled, Dulce de Leche is piped onto half the cookies, and topped with remaining cookies to form sandwiches. Semi-sweet chocolate chips melted with coconut oil create a smooth coating for dipping. Crushed nuts sprinkled on the dipped half offer texture and a nutty accent.

These sandwich cookies provide a balance between the sweet, caramel-like filling and rich chocolate with crunchy nuts. The preparation allows for visually appealing treats ideal for gifting or festive occasions.

Ingredients

Servings
  • 200 g butter room temperature, unsalted
  • 1 cup powdered sugar
  • 4 egg yolk
  • 2 1/2 cup flour
  • 1 tsp baking powder
  • 1 cup dulce de leche
  • 2 cup semi sweet chocolate chips
  • 1 tsp coconut oil
  • 1/2 cup nut crushed

Instructions

  1. In a large bowl, whisk together butter, sugar and egg yolks.
  2. As soon as the mixture is smooth, add baking powder and flour in small portions. Mix by hand or with a spatula until the dough is nice and crumbly.
  3. Seperate the dough in half. Cover it with plastic wrap and roll it out into 1/4-inch thickness.
  4. Using a cookie cutter, create your sandwich cookie halves. Use a knife to lift each cookie and move it onto a baking sheet. Bake at 350°F for 12-15 minutes. Let cool to room temperature.
  5. Fill a piping or a ziplock bag with dulce de leche. Pipe the filling onto half of the cookies. Immediately cover dulce de leche with another cookie half to form a sandwich.
  6. Melt chocolate chips in a microwave, stirring every few seconds to prevent burning. Add coconut oil into the melted chocolate to make the chocolate a bit runny.
  7. Dip half of each cookie into chocolate and place the cookie on a baking mat. Sprinkle with crushed nuts and allow chocolate to harden at room temperature.
