Dutch Baby Puff Pancake

A Dutch Baby is a light and airy puffed pancake baked in the oven with a base of eggs, milk, flour, and sugar. It rises dramatically during baking to create a golden, crisp edge with a tender, slightly custardy center. Finished with powdered sugar and served with toppings like fresh berries and whipped cream, it offers a visually impressive and textured breakfast or brunch item.

Description

The Dutch Baby batter is prepared by blending eggs, sugar, vanilla, milk, flour, and salt, creating a smooth mix that when baked with melted butter in a hot oven, puffs up significantly. The baking process forms crispy edges around a soft center. The key is to avoid opening the oven early, preventing collapse. Its texture contrasts a light crisp crust with a tender middle that holds toppings well.

Traditionally, it is dusted with powdered sugar and served warm, accompanied by maple syrup, fresh fruit, whipped cream, or lemon zest for bright freshness. The recipe also includes instructions for freshly whipped cream to complement the pancake.

This Dutch Baby offers an elegant breakfast option with a dramatic presentation and the flexibility to vary toppings according to preference and season. It is best served immediately out of the oven to appreciate the puffiness and texture.

Ingredients

Servings
  • 6 Tablespoons butter
  • 3 large egg
  • 2 Tablespoons sugar
  • 2 teaspoons vanilla
  • 1 cup milk whole
  • 1 cup flour
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 400 degrees.
  2. Put butter into large (12 inch) non-stick skillet or baking dish and place in oven.
  3. In a blender, combine eggs, sugar, vanilla, milk, flour and salt and blend until combined.
  4. Carefully remove the hot pan from oven once butter is melted. Swirl the butter around pan to coat completely. Pour the batter into skillet and return to oven.
  5. Bake for 20-22 minutes or until the pancake puffs in the center and is golden brown along the edges. Do not open the oven for the first 15 minutes or the Dutch Baby will deflate.
  6. Remove from oven and sprinkle with powdered sugar.
  7. Top with maple syrup, fresh whipped cream, and berries.
  8. To make fresh whipped cream: Using mixer, whip heavy cream until soft peak form. Stir in powdered sugar.

Notes

  • Try topping with various fresh berries or seasonal fruit like peaches or bananas for different flavors.
  • Maple syrup, buttermilk syrup, or lemon zest can add unique finishing touches.
  • Freshly whipped cream can be made by whipping heavy cream with powdered sugar until soft peaks form for a creamy accompaniment.
