EASTER PEEPS CAKE

This colorful Peeps Cake is a fun and festive Easter dessert! A moist vanilla cake is topped with fluffy buttercream frosting and decorated with marshmallow Peeps and pastel sprinkles. Perfect for Easter celebrations!

Ingredients

For the Cake:
  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup whole milk
For the Frosting:
  • 1 cup unsalted butter softened
  • 3 ½ cups powdered sugar
  • 2 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract
  • Food Coloring pastel pink, blue, yellow, or purple
For Decoration:
  • marshmallow PEEPS assorted colors
  • Pastel Sprinkles

Instructions

Step No.1: Preheat and Prep

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or two 9-inch round cake pans.
Step No.2: Make the Cake Batter
  1. In a medium bowl, whisk together flour, baking powder, and salt. In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla extract. Alternate adding flour mixture and milk, mixing until just combined.
Step No.3: Bake the Cake
  1. Pour batter into the prepared pan(s) and smooth the top. Bake for 28-30 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
Step No.4: Make the Frosting
  1. In a large bowl, beat butter until creamy. Gradually add powdered sugar, mixing well. Add heavy cream and vanilla extract, then beat until fluffy. Add food coloring if desired.
Step No.5: Frost and Decorate
  1. Spread frosting over the cooled cake. Arrange Peeps marshmallows on top in a colorful pattern and sprinkle with pastel sprinkles.
